Lemon F'Ayr (named after the local Lemon Fair river but not lemon flavored) is an artisan farmstead cheese made from raw Ayrshire cow's milk. We start with a recipe similar to our Vermont Ayr cheese, but wax it and sell it younger (3 months). The flavor is mild with a creamy semi-soft consistency reminiscent of a Gouda.
